Hi, I’m Diane and I love all things sweet. As you can see from my work, I’m a Chicago-based, freelance pastry chef, who can’t help but experiment. I specialize in:
• Specialty and sculpted cakes
• Vegan and Gluten free goodies
• Diabetic-friendly sugar free pastries

I also do traditional cakes and goodies to satisfy your sweet tooth (they’re just not as much fun to make, but they still taste amazing).

Perhaps even more amazingly, I have simultaneously experienced gratitude for both of these sensations. This happens to me every time I sample one of Diane Mejia’s latest culinary creations.

And what, you may ask, makes these pastries so special? Each one is a unique labor of love, endowed with all the aesthetic appeal and scientific ingenuity that its creator can muster. Not only does each baked good represent a tasty triumph, but it also reflects hours upon hours of exquisite attention to detail. Diane, pastry scientist extraordinaire, has innovated cakes that resemble books, movie and video game characters, household objects, and fashion accessories (just to name a few). She has also created cupcakes with unique flavor combinations and delectable cookie-cakes that would make Little Debbie flush with envy.

But wait, I haven’t even told you the best part yet: Diane has utilized her talents for the good of her community. She has auspiciously donated her cupcakes to several fundraisers, such as when she was the primary pastry chef for a charity bake sale that I hosted to raise money for the Leukemia and Lymphoma Society. She has branched out into gluten-free baking, so that people like my wife, who have celiac disease (gluten intolerance), can also fully enjoy the splendors of her treats. Not only this, but she will gladly construct one of her should be famous works of delicious art for loved ones’ birthdays, weddings, and baby showers.

I feel as though knowing Diane is a lot like knowing Picasso before he became famous. His friends must have seen his talent and been grateful to be witness to such genius before anyone else. And so, for me I am grateful to have met someone who will undoubtedly leave her tasty, chocolate-filled mark upon the world.

Recently, my daughter was testing for her black belt in Karate, so we wanted a special custom cake made to celebrate her achievement. We were thinking of going with one of our local bakeries that we have been using for many years. Even though this other bakery was well know, and has been around for over 40 years, we still looked around as we wanted the best for our party.

Because of the comments I’ve heard about Diane and her exquisite cakes, we decided to give her a try. When we first contacted Diane we wanted her to create something different from the normal cake. We gave her some guidelines on the type of cake, and the fillings, but told her to use her creativity to create something totally different.

We couldn’t have been happier! The cake she designed looked like it could easily win on any of the baking shows. When our guests arrived they all commented on the cake and asked where we got it. The design was so incredible that it was hard to cut into it to serve. Most of our guests took pictures of the cake using their cell phones. Diane even drew a picture of my daughter on the cake with matching hair color. The cake itself was moist and had a fantastic flavor. This cake exceeded our expectations. We plan to order more cakes from her in the future. Just as one last comment, I wish I lived next to her so I could help with any “samples” or “taste tests”.

Currently I am in pastry school, further expanding on my skills. That means that I take orders on a strictly part time basis (for now). Also, at this time I cannot accommodate orders serving over fifty people. Please contact me with plenty of notice (at least 7 days, 10 would be even better) before your event.
